Sour pho: A unique dish of ethnic people in highland of Tuyen Quang

The ingredients of the dish include pho, roasted pork, boiled pork liver, sausage, and raw vegetables such as coriander, lettuce, dill, onions, etc.

It is served with crushed roasted peanuts, fried shallots, and a tangy-sweet medley of pickled carrots and cucumbers.

Not only flavorful, pho chua is also easy to digest, making it ideal for the cool mornings and dry noons of the highland climate. This dish is a familiar sight at local markets, during hot summer days, or at family gatherings.

Today, many restaurants in Tuyen Quang have added pho chua to their tourism menus. However, to fully savor its rustic and profound taste, nothing compares to enjoying a bowl of pho chua in a remote ethnic village, where the dish is born from stone, mist, and the warm hospitality of the highland people.
