BHG - When mentioning the cuisine of the Tay ethnic people in Ha Giang Province, one will think of the popular dishes such as ‘gai’ cake, banana cake, ant egg cake, and five-coloured sticky rice. But, duck noodles are an unforgettable breakfast for tourists if they have the opportunity to come to Ha Giang. This dish is not only delicious but also shows the unique culinary culture of the local Tay people.

The ducks raised by the Tay people on streams or ponds are fat, firm meat. They are processed into typical, rich duck noodles. |

After being cooked, the duck meat will be cut into bite-sized pieces and arranged on a tray so that when guests arrive, the host will divide the duck meat into bowls of noodles. |

The noodles are made by the locals at every step. Initially, people shape the dough into balls and put them into a simple homemade mould. From here, the smooth, round noodles will flow through the mould, into the pot of boiling water, and boil for 5 minutes. |

Duck meat is usually placed on top of the white noodle layer, adding indigenous herbs from the mountainous area, bamboo shoots, and then finishing with a ladle of broth. The broth is also made from duck bones. |

The Tay people's duck noodles have impressed diners, with people remembering its delicious taste when mentioning Ha Giang cuisine. The delicious taste comes from the combination of the fattiness of the broth, and the rich flavour of the long, smooth, soft noodles. A bowl of duck noodles has duck meat, herbs such as coriander, chives, a little chilli, a little lemon, kumquat, chilli bamboo shoots, and basil.
